  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, rinsed
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 cups beef broth (low-sodium)
  • Salt and pepper to taste
  • Sour cream and fresh cilantro for serving

Instructions

  1. Heat a large pot over medium heat. Sauté the chopped onion and bell pepper until soft, about 5 minutes.
  2. Add minced garlic and ground beef to the pot. Cook until browned, breaking up the meat into crumbles (7–10 minutes).
  3. Stir in chili powder and cumin, coating the beef evenly. Pour in diced tomatoes with their juice.
  4. Add rinsed kidney beans and beef broth. Bring to a gentle boil, then reduce heat to simmer.
  5. Simmer uncovered for 30 minutes, stirring occasionally until thickened.
  6. Serve hot topped with sour cream and cilantro.
