  • 1 cup bell peppers, sliced (red, yellow, or green)
  • 1 cup sweet onions, sliced
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Prepare your ingredients by slicing the steak against the grain and chopping bell peppers and onions.
  2. Heat a skillet over medium-high heat; add olive oil and sear the steak for 3-4 minutes until just pink in the center. Remove and set aside.
  3. In the same skillet, sauté onions and bell peppers until softened and slightly caramelized (about 5 minutes).
  4. Assemble each quesadilla by layering cheese, sautéed veggies, and steak on one half of each tortilla. Fold over to secure fillings.
  5. Cook folded quesadillas in the skillet for about 3-4 minutes per side or until golden brown and cheese is melted.
