  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 large yellow onion, sliced
  • 2 tablespoons fajita seasoning
  • 1 cup shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 baking dish with nonstick spray.
  2. In a skillet over medium heat, heat olive oil and sauté sliced onions and bell peppers for about 5-7 minutes until softened.
  3. Add diced chicken and fajita seasoning; cook for an additional 8-10 minutes until the chicken is cooked through.
  4. In a large bowl, mix the chicken mixture with black beans, diced tomatoes, and half of the shredded cheese.
  5. Pour into the prepared baking dish, top with remaining cheese, and bake for 20-25 minutes until bubbly and golden brown.
  6. Garnish with fresh cilantro before serving.
