  • 2 lbs beef chuck roast, cut into bite-sized pieces

  • 3 medium Yukon Gold potatoes, diced

  • 2 tsp fresh thyme
  • 2 tsp fresh rosemary
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper (or to taste)
  • 2 tbsp extra virgin olive oil
  • 2 bay leaves

Instructions

  1. Prepare ingredients by chopping beef, dicing onions, mincing garlic, and slicing carrots.
  2. In a large pot over medium heat, sauté onions and garlic in olive oil until translucent (about 3 minutes).
  3. Add beef chunks and brown on all sides (approximately 5 minutes).
  4. Stir in carrots, potatoes, thyme, rosemary, salt, pepper, and bay leaves; cook for another 2 minutes.
  5. Pour in the apple cider and bring to a boil. Reduce heat to low and simmer covered for about 2 hours until meat is tender.
