Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a large bowl, mix almond flour, rolled oats, baking powder, cinnamon, and nutmeg until well combined.
  3. In another bowl, whisk together the eggs, maple syrup, vanilla extract, and melted coconut oil until smooth. Combine this mixture with the dry ingredients and stir until just mixed.
  4. Gently fold in grated carrots, diced apples, and chopped nuts until evenly coated.
  5. Fill each muffin cup about three-quarters full and bake for 20-25 minutes until golden brown. A toothpick inserted should come out clean.
