  • 1 box (15.25 oz) Funfetti Cake Mix
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 pint vanilla ice cream (softened)
  • 1/2 cup rainbow sprinkles
  • 1 cup whipped topping

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Prepare the Funfetti cake mix as per package instructions by combining it with eggs and vegetable oil. Divide the batter evenly between the two pans.
  3. Bake for 25–30 minutes until golden brown; check doneness with a toothpick. Allow cakes to cool completely.
  4. Once cooled, place one layer on a serving platter and spread half of the softened vanilla ice cream over it. Sprinkle half of the rainbow sprinkles on top.
  5. Add the second layer of cake, then spread more ice cream on top and around the sides. Cover entirely with remaining sprinkles.
  6. Freeze the assembled cake for at least 4 hours before slicing.
  7. Remove from freezer about 10 minutes before slicing for easier cutting.
