  • 2 lb pork tenderloin
  • 1/2 cup brown sugar
  • 1/4 cup low-sodium soy sauce
  • 4 garlic cloves, minced
  • 2 tbsp Dijon mustard
  • 2 tbsp apple cider vinegar
  • 1 tbsp olive oil
  • 1 tsp black pepper

Instructions

  1. Trim excess fat from the pork tenderloin and pat dry.
  2. In a bowl, mix brown sugar, soy sauce, minced garlic, Dijon mustard, apple cider vinegar, and black pepper until smooth.
  3. (Optional) Heat olive oil in a skillet over medium-high heat and sear each side of the pork for about 3-4 minutes until browned.
  4. Place the pork in the slow cooker and pour half of the glaze over it.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
  6. (Optional) Simmer remaining glaze in a saucepan until thickened before drizzling over the pork before serving.
