  • 2 medium zucchinis (about 400g)
  • 1 cup seasoned breadcrumbs
  • 2 large eggs
  • ½ cup grated Parmesan cheese
  • ¼ cup chopped fresh herbs (parsley and dill)
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Grate the zucchinis using a box grater and squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, combine grated zucchini, breadcrumbs, eggs, Parmesan cheese, chopped herbs, garlic powder, salt, and pepper. Mix until well combined.
  3. Form the mixture into small patties about 2-3 inches in diameter and place on a parchment-lined baking sheet.
  4. Heat enough oil in a large skillet over medium heat until shimmering.
  5. Fry the patties in batches for 3-4 minutes on each side until golden brown and crispy.
  6. Transfer cooked patties to paper towels to drain excess oil. Serve warm with your favorite dipping sauce.
