  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1 large red bell pepper, chopped
  • 1 cup Kalamata olives, pitted
  • 1 cup feta cheese, crumbled
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  2. Season chicken breasts with salt, pepper, oregano, and thyme.
  3. In a skillet over medium heat, sauté minced garlic in olive oil until fragrant. Add chopped bell peppers and cook until tender.
  4. Stir in halved cherry tomatoes and Kalamata olives; cook until tomatoes soften.
  5. Place seasoned chicken in the baking dish and top with sautéed vegetables and crumbled feta.
  6. Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until chicken reaches an internal temperature of 165°F (75°C).
