  • 4 boneless, skinless chicken breasts
  • 1 cup Greek yogurt (full-fat)
  • 1 medium cucumber (grated)
  • 3 garlic cloves (minced)
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • 2 tsp dried oregano
  • 4 pitas
  • 1 cup diced tomatoes
  • ½ cup sliced red onion
  • Salt and pepper to taste

Instructions

  1. Marinate the chicken by combining it with olive oil, lemon juice, oregano, minced garlic, salt, and pepper in a bowl. Let it sit for at least 30 minutes.
  2. For tzatziki sauce, mix Greek yogurt, grated cucumber (drained), minced garlic, lemon juice, salt, and pepper in a separate bowl. Chill until ready to serve.
  3. Preheat the grill or skillet over medium-high heat and cook marinated chicken for about 6-7 minutes per side until golden brown and cooked through.
  4. Allow chicken to rest for a few minutes before slicing thinly against the grain.
  5. Assemble gyros by placing sliced chicken on warm pita bread, then adding tzatziki sauce, tomatoes, and red onions.
  6. Serve immediately and enjoy!
