  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 1 (4 oz) can diced green chiles
  • 8 oz cream cheese (full-fat)
  • 1 cup sour cream
  • 2 cups shredded cheese (Monterey Jack & cheddar blend)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Season chicken breasts with salt and pepper; bake for 25-30 minutes until cooked through.
  2. Let chicken cool slightly before shredding into bite-sized pieces.
  3. In a large bowl, mix shredded chicken, cream cheese, sour cream, green chiles, garlic powder, onion powder, and half the cheese until well combined.
  4. If using cilantro, stir it in now; adjust seasoning as desired.
  5. Transfer mixture to an oven-safe dish; sprinkle remaining cheese on top. Bake for 20-25 minutes until bubbly and golden brown.
  6. Allow to cool slightly before serving with tortilla chips.
