  • 1 tsp baking powder

  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • ½ cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a muffin tin.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and a pinch of salt.
  3. In another bowl, mix pumpkin puree, eggs, oil, and vanilla until smooth.
  4. Gently fold the wet ingredients into the dry mixture until just combined; lumpy batter is fine.
  5. Stir in chocolate chips if using.
  6. Spoon batter into muffin tin and bake for 20-25 minutes or until a toothpick comes out clean.
  7. Cool for 5 minutes before transferring to a wire rack.
