  • 2 cups granulated sugar
  • 1 cup water
  • 1 packet pectin (optional for thicker jam)

Instructions

  1. Wash and dry the lemons. Zest them carefully, then juice to yield about 1 cup.
  2. In a saucepan, combine water and sugar over low heat until dissolved (about 5 minutes).
  3. Stir in lemon zest and juice, simmering for 10 minutes while stirring occasionally.
  4. If using pectin, add it during the last five minutes of simmering and stir well.
  5. Pour hot jam into sterilized jars, seal tightly, and cool at room temperature before refrigerating.
