  • 1/4 cup almond flour
  • 1 large egg
  • 1 small sweet onion (diced)
  • 3 cloves garlic (minced)
  • 8 oz cremini mushrooms (sliced)
  • 1 cup heavy cream
  • 1/2 cup beef broth (low-sodium)
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil
  • Fresh parsley (chopped for garnish)

Instructions

  1. In a large bowl, combine ground beef, almond flour, egg, minced garlic, diced onion, salt, and pepper. Mix well and form into 1-inch meatballs.
  2. Heat olive oil in a skillet over medium heat. Sear meatballs until browned on all sides (8-10 minutes). Remove and set aside.
  3. In the same skillet, add sliced mushrooms and cook until soft (about 5 minutes).
  4. Pour in heavy cream, beef broth, and Dijon mustard; stir to combine and bring to a simmer.
  5. Return meatballs to the skillet and simmer in the sauce for an additional 10-15 minutes until cooked through.
  6. Garnish with chopped parsley before serving over cauliflower rice or zucchini noodles.
