  • 3 tbsp Korean gochujang
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup brown sugar (dark preferred)
  • 1 tbsp sesame oil
  • 2 green onions, finely chopped

Instructions

  1. In a bowl, whisk together soy sauce, gochujang, minced garlic (2 cloves), brown sugar, grated ginger, and sesame oil until smooth.
  2. Place chicken thighs in a resealable bag or bowl and pour marinade over them. Ensure each piece is well-coated and let marinate in the refrigerator for at least 30 minutes.
  3. Preheat grill to medium-high heat (about 375°F).
  4. Remove chicken from marinade (reserve some) and place on the grill. Cook for 6-7 minutes per side until caramelized and reaches an internal temperature of 165°F.
  5. Baste with reserved marinade during grilling for added flavor.
  6. Let rest before slicing and garnish with chopped green onions.
