  • 1 lb lean ground beef
  • 1 packet taco seasoning (about 1 oz)
  • 4 cups tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sour cream or Greek yogurt
  • 2 green onions, chopped
  • 1/2 cup taco sauce

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. 2. In a skillet over medium heat, brown the ground beef. Drain excess fat and stir in the taco seasoning until fragrant.
  3. 3. Layer half of the tortilla chips at the bottom of the baking dish. Add half of the seasoned beef mixture, followed by half of the cheese and black beans. Repeat with remaining ingredients to create layers.
  4. 4. Drizzle taco sauce over the top layer and add any remaining cheese. Cover loosely with aluminum foil.
  5. 5. Bake for about 25 minutes, removing foil during the last 10 minutes to allow cheese to bubble up.
  6. 6. Allow to cool slightly before serving hot, topped with sour cream and chopped green onions.
