  • 2 medium zucchinis (about 400g)
  • 1 cup whole milk ricotta cheese (240g)
  • 1 cup marinara sauce (240ml)
  • 1.5 cups shredded mozzarella cheese (150g)
  • 1/4 cup fresh basil, chopped (15g)
  • 2 tablespoons extra virgin olive oil (30ml)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
  2. Slice zucchinis into thin rounds (¼ inch thick) and sprinkle with salt. Let sit on paper towels to draw out moisture.
  3. In a bowl, mix ricotta, half of the mozzarella, basil, and a pinch of salt until combined.
  4. Layer zucchini slices in the prepared baking dish; spread marinara over them followed by dollops of the ricotta mixture.
  5. Repeat layers until ingredients are used up, finishing with remaining mozzarella on top.
  6. Bake for 30-35 minutes until bubbly and golden brown. Let cool slightly before serving.
