  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (softened)

  • 1 cup powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a bowl, mix flour and granulated sugar. Cut in softened butter until crumbly. Press mixture into the bottom of the prepared pan.
  3. Bake crust for 20 minutes until golden brown.
  4. While crust bakes, whisk together eggs, granulated sugar, lemon juice, and zest until smooth.
  5. Pour the lemon mixture over the hot crust and return to the oven. Bake for an additional 20-25 minutes until edges are set but center has a slight jiggle.
  6. Allow to cool completely before slicing into squares. Dust with powdered sugar before serving.
