  • 1 cup creamed corn
  • 2 cups shredded sharp cheddar cheese
  • 1 cup sour cream (or Greek yogurt)
  • 1 box (8.5 oz) Jiffy Corn Muffin Mix
  • 1/2 cup unsalted butter, melted
  • 1/4 cup chopped green onions (reserve some for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a medium baking dish.
  2. In a large bowl, mix together canned corn, creamed corn, cheddar cheese, sour cream, Jiffy mix, melted butter, and chopped green onions until well combined.
  3. Season with salt and pepper to your liking and stir again.
  4. Pour the mixture into the prepared baking dish and spread evenly.
  5. Bake for 45-50 minutes until golden brown on top and bubbling around the edges.
  6. Let cool for 10 minutes before serving; garnish with reserved green onions.
