  • 2 medium sweet potatoes
  • 4 oz brie cheese
  • 1/4 cup pure maple syrup
  • 1/2 cup pecans (toasted)
  • 1 tsp cinnamon
  • Olive oil (for drizzling)
  • Salt & pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C). Grease a baking dish.
  2. Slice the sweet potatoes in half lengthwise and place cut-side up in the dish. Drizzle with olive oil, then sprinkle with salt, pepper, and cinnamon.
  3. Roast for 25-30 minutes until fork-tender.
  4. While they roast, chop pecans and mix with maple syrup in a bowl.
  5. Once sweet potatoes are done, create wells by pressing down gently on each half; add brie slices into each well.
  6. Return to the oven for another 5-7 minutes until the brie is melted.
  7. Drizzle additional maple syrup over each potato half and sprinkle with the pecan mixture before serving.
