  • 4 medium carrots, chopped
  • 2 large yellow onions, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 cup red wine
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Heat olive oil in a large pot over medium-high heat. Season the chuck roast with salt and pepper and sear until browned on all sides (about 3-4 minutes each side).
  3. Remove the roast and add onions, carrots, and garlic to the pot; sauté until onions are translucent (about 5 minutes).
  4. Pour in red wine, scraping up any brown bits from the pot; simmer for 2-3 minutes.
  5. Return the roast to the pot and add beef broth until submerged halfway. Add thyme and rosemary.
  6. Cover and slow cook on low heat for 3-4 hours in the oven or transfer to a slow cooker on low for 6-8 hours.
  7. Once fork-tender, shred the meat with two forks and return it to the liquid before serving.
