  • 3 egg yolks, at room temperature
  • 1/2 cup superfine sugar (for meringue)
  • 1/4 tsp lilac extract
  • 1/2 cup heavy whipping cream

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour and 1/4 cup sugar; cut in cold butter until crumbly. Press into mini tart pans.
  2. Bake crusts for 15 minutes until golden brown. Let cool.
  3. Whisk together lemon juice, 1/2 cup sugar, and egg yolks; fill baked tart shells with mixture.
  4. Bake again for 10-15 minutes until slightly set. Allow to cool.
  5. Beat heavy cream until soft peaks form; gradually add superfine sugar and lilac extract until stiff peaks form.
  6. Pipe or dollop lilac meringue onto cooled tarts; optionally toast lightly before serving.
