Instructions

  1. 1. Preheat oven to 375°F (190°C) and grease mini tart pans.
  2. 2. In a bowl, combine flour and sugar; cut in cold butter until crumbly. Add ice water until dough forms. Chill for 30 minutes.
  3. 3. Roll out the dough to 1/8 inch thick, cut rounds, and fit into tart pans. Prick bottoms with a fork.
  4. 4. Bake for 15 minutes until golden brown; cool completely.
  5. 5. For custard, warm milk and vanilla in a saucepan. Whisk eggs and sugar in a bowl; gradually add warm milk while whisking.
  6. 6. Pour custard into cooled tart shells and bake for another 20 minutes until set but slightly wobbly.
