  • 1 cup unsulfured molasses
  • 1 cup light brown sugar
  • ½ cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 2 large eggs (room temperature)
  • 1 tsp baking soda
  • ¼ tsp salt
  • 12 Rolos (one per cookie)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, cream together the butter and brown sugar until fluffy (about 3 minutes).
  3. Mix in molasses and eggs one at a time until well combined.
  4. In another bowl, whisk together flour, baking soda, and salt; gradually add to wet ingredients.
  5. Scoop tablespoon-sized portions of dough into muffin cups, creating an indentation in each for a Rolo.
  6. Place a Rolo in each cup and bake for 10-12 minutes until edges are golden brown.
  7. Allow to cool slightly before removing from the tin.
