  • 6 slices thick-cut bacon
  • 1 cup shredded sharp cheddar cheese
  • ½ cup BBQ sauce
  • ¼ cup chopped green onions
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1 tsp smoked paprika
  • 1 tsp garlic powder

Instructions

  1. In a bowl, whisk together olive oil, salt, pepper, smoked paprika, and garlic powder. Coat chicken breasts and marinate for at least 30 minutes.
  2. Fry bacon in a skillet over medium heat until crispy. Drain on paper towels, reserving drippings. Chop bacon into bits.
  3. Preheat grill to medium-high (375°F/190°C). Grill marinated chicken for 6-7 minutes per side until internal temperature reaches 165°F (75°C).
  4. Spread BBQ sauce over grilled chicken, sprinkle with bacon bits and cheddar cheese. Cover grill for 2-3 minutes until cheese melts.
  5. Let rest for one minute; garnish with chopped green onions before serving.
