  • 1 cup brown sugar (light or dark)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp fine sea salt
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs (room temperature)
  • 1 tsp pure vanilla extract
  • Optional: 1 cup chocolate chips or nuts

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease an 8×8-inch baking dish or line it with parchment paper.
  2. In a large bowl, mix rolled oats, flour, baking powder, and salt until combined.
  3. In another bowl, whisk melted butter and brown sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Combine the wet mixture with the dry ingredients until just mixed. Fold in your choice of chocolate chips or nuts.
  5. Pour the batter into the prepared dish and spread evenly. Bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
  6. Allow to cool before cutting into squares.
