  • 1/2 cup high-quality balsamic vinegar
  • 1 lb fresh asparagus, trimmed
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried Italian herbs (basil, oregano, thyme)

Instructions

  1. Preheat your oven to 400°F (200°C). Rinse the asparagus and trim the tough ends.
  2. In a bowl, whisk together balsamic vinegar, olive oil, honey, garlic, salt, pepper, and Italian herbs.
  3. Place chicken breasts in a resealable bag or dish; pour half of the marinade over them to marinate for 15-30 minutes.
  4. Heat an oven-safe skillet over medium-high heat with a splash of olive oil. Sear the chicken for 5-6 minutes until golden brown.
  5. Add asparagus to the skillet after flipping the chicken. Drizzle with remaining marinade and stir to coat.
  6. Transfer the skillet to the oven and bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (75°C).
