  • 1 lb shrimp (fresh or frozen)
  • 8 oz Andouille sausage, sliced
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 14 oz canned diced tomatoes with green chilies
  • 1 cup long-grain rice
  • 3 cups chicken broth
  • 2 tsp Cajun seasoning
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions, bell peppers, and garlic until soft (about 5 minutes).
  2. Add sliced chicken and sausage; cook until browned on all sides (7-10 minutes).
  3. Stir in rice, canned tomatoes, and chicken broth; bring to a boil.
  4. Reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender.
  5. Fold in shrimp during the last 5 minutes of cooking until they turn pink.
