  • 2 tbsp olive oil
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 lemon (zested and halved)
  • 4 cloves garlic (crushed)
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat the half chicken dry and rub generously with olive oil.
  3. Season both sides with salt and pepper, then press crushed garlic into the skin.
  4. Place rosemary and thyme sprigs inside and on top of the chicken; squeeze lemon juice over it and tuck lemon halves around.
