Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in peanut butter and vanilla extract until smooth.
  4. In another bowl, whisk flour, baking soda, and salt together. Gradually add to the wet mixture until just combined.
  5. Fold in chopped chocolate peanut butter cups.
  6. Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10–12 minutes until edges are golden but centers remain soft. Cool on the baking sheet for 5 minutes before transferring to wire racks.
