  • 1/2 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter, brown sugar, and granulated sugar until fluffy (about 2-3 minutes).
  3. Beat in the eggs one at a time along with the vanilla extract until smooth.
  4. In another bowl, whisk together the flour, baking powder, salt, and cinnamon; fold into the wet ingredients until just combined.
  5. Grease a muffin tin and scoop the dough into each cup until about two-thirds full. Press down gently to form cups.
  6. In a separate bowl, mix together the toasted pecans, brown sugar, eggs, vanilla extract, and salt for the filling.
  7. Pour the pecan mixture into each cookie cup. Bake for 20-25 minutes until set but slightly soft in the center. Let cool before removing from the tin.
