  • 4 cups day-old rye bread, cubed
  • 1 lb lean corned beef, shredded
  • 2 cups sauerkraut, drained
  • 2 cups shredded Swiss cheese
  • 1 cup Thousand Island dressing
  • 1 tsp caraway seeds (optional)
  • 2 tbsp butter (for greasing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter.
  2. Layer half of the rye bread cubes in the dish.
  3. Spread half of the corned beef over the bread, followed by half of the sauerkraut and half of the Swiss cheese.
  4. Repeat the layers with the remaining ingredients.
  5. Drizzle Thousand Island dressing over the top and sprinkle with caraway seeds if using.
  6. Cover with aluminum foil (shiny side down) and bake for 30 minutes.
  7. Remove foil and bake for an additional 15-20 minutes until bubbly and golden brown.
  8. Let cool for a few minutes before slicing and serving.
