  • 4 large flour tortillas
  • 1 cup enchilada sauce
  • 2 cups shredded cheese (mozzarella and cheddar blend)
  • 1 medium onion, diced
  • 1 cup bell peppers, diced (any color)
  • 2 tsp cumin
  • 2 tsp chili powder
  • Sour cream (optional, for serving)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, sauté the diced onions until translucent. Add the bell peppers and cook for an additional five minutes.
  3. Add the ground beef to the skillet and brown thoroughly while breaking it apart. Season with cumin and chili powder.
  4. Stir in half of the enchilada sauce until the beef and veggies are well coated.
  5. Spoon the filling onto one end of each tortilla, roll them up tightly, and place them seam-side down in a baking dish.
  6. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with shredded cheese.
  7. Bake for about 20 minutes or until bubbly and golden.
