Ingredients

Scale
  • 12 oz frozen potstickers (your choice of filling)
  • 1 cup bell peppers (sliced, mixed colors)
  • 1 cup carrots (sliced thinly)
  • 2 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 3 tbsp soy sauce (low-sodium recommended)
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch mixed with 2 tsp water
  • 1 tbsp sesame oil
  • 2 green onions (chopped)

Instructions

  1. Prep ingredients: Slice bell peppers and carrots; mince garlic and grate ginger.
  2. Sauté vegetables: Heat sesame oil in a large skillet over medium heat. Add garlic and ginger; sauté for about 30 seconds. Add bell peppers and carrots; cook until slightly softened.
  3. Cook potstickers: Gently add frozen potstickers to the skillet. Cook according to package instructions until golden brown on one side (about 4-5 minutes).
  4. Make the sauce: In a small bowl, combine soy sauce, rice vinegar, cornstarch mixture, and any remaining sesame oil. Pour over potstickers and vegetables once they are golden.
  5. Toss together: Cook for an additional 3-4 minutes until the sauce thickens slightly while gently stirring to avoid breaking the potstickers.
  6. Garnish: Top with chopped green onions before serving.
