  • 1 packet (2 ¼ tsp) active dry yeast
  • ½ teaspoon salt
  • ½ cup milk (warm)
  • 2 large eggs
  • ½ cup unsalted butter (melted)
  • 1 cup canned pumpkin puree
  • 8 oz cream cheese (softened)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • Oil for frying

Instructions

  1. 1. Prepare the brioche dough: In a bowl, mix warm milk, sugar, and yeast. Let sit until foamy. In another bowl, combine flour and salt. Gradually add the yeast mixture, eggs, and melted butter until smooth.
  2. 2. Knead the dough: On a floured surface, knead the dough for 5–7 minutes until elastic.
  3. 3. Let it rise: Place in an oiled bowl, cover with a damp cloth, and let rise for about an hour or until doubled in size.
  4. 4. Make the cheesecake filling: In a bowl, blend softened cream cheese, pumpkin puree, sugar, cinnamon, nutmeg, and vanilla until smooth.
  5. 5. Shape and fill: Roll out the risen dough to about ½ inch thick. Cut circles and place filling on half before sealing with another circle.
