Instructions

  1. Preheat oven to 375°F (190°C) and line a jelly roll pan with parchment paper; lightly spray with nonstick cooking spray.
  2. In a large bowl, whisk together pumpkin, eggs, sugar, and melted butter until smooth. Gradually stir in flour, baking powder, cinnamon, and salt until just combined.
  3. Spread the batter evenly in the prepared pan and bake for 13-15 minutes until golden brown and springy to touch.
  4. Invert the hot cake onto a clean kitchen towel dusted with powdered sugar; peel off parchment paper and roll the cake up in the towel. Allow it to cool completely.
  5. Beat softened cream cheese, powdered sugar, and vanilla until creamy. Once the cake has cooled, unroll it gently, spread the cream cheese mixture over it, then re-roll without the towel.
  6. Wrap tightly in plastic wrap and refrigerate for at least an hour before slicing.
