  • ⅓ cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine pumpkin puree, eggs, melted butter, and milk until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined.
  5. For the streusel topping, mix oats with melted butter, flour, brown sugar, cinnamon, and chopped nuts in a separate bowl until crumbly.
  6. Fill each muffin cup two-thirds full with batter and sprinkle streusel topping generously over each muffin.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
