  • For the Brownie Layer

    • ½ cup (115g) unsalted butter, melted

    • ½ cup (100g) granulated sugar

    • ¼ cup (50g) brown sugar

    • 2 large eggs

    • 1 tsp vanilla extract

    • ⅓ cup (40g) all-purpose flour

    • ⅓ cup (30g) unsweetened cocoa powder

    • ¼ tsp salt

    For the Cheesecake Swirl

    • 8 oz (225g) cream cheese, softened

    • ⅓ cup (40g) powdered sugar

    • 1 large egg

    • ½ tsp vanilla extract

    For the Raspberry Swirl

    • ½ cup fresh raspberries (or thawed frozen)

    • 1 tsp sugar (optional, if berries are tart)

Instructions

  • Prep the Pan
    Preheat oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) pan with parchment paper.

  • Make the Brownie Batter
    In a bowl, whisk melted butter with both sugars. Add eggs and vanilla; mix until glossy. Sift in flour, cocoa, and salt. Stir just until combined.

  • Make the Cheesecake Layer
    In a separate bowl, beat cream cheese, powdered sugar, egg, and vanilla until smooth and creamy.

  • Mash the Raspberries
    Lightly mash raspberries with a fork. Sweeten with sugar if desired.

  • Assemble
    Pour most of the brownie batter into the pan. Spread the cheesecake mixture over it. Add dollops of mashed raspberries and the remaining brownie batter on top. Swirl gently with a knife.

  • Bake
    Bake for 30–35 minutes or until the center is just set. Cool completely in pan before slicing.

  • Let brownies cool before cutting for clean edges.

  • Chill in the fridge for firmer, fudgier texture.

  • Top each square with a fresh raspberry for extra flair (like in the photo)!
