  • 1 can (13.5 oz) full-fat coconut milk
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1-inch piece fresh ginger, grated
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 4 cups low-sodium vegetable broth
  • 2 cups fresh spinach or kale, chopped
  • Juice of 1 lime
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil and sauté the chopped onion until translucent.
  2. Add minced garlic and grated ginger; cook until fragrant, about 1-2 minutes.
  3. Stir in cumin, turmeric, and coriander; toast for about 30 seconds.
  4. Add rinsed lentils, vegetable broth, and coconut milk; stir to combine.
  5. Bring to a simmer; reduce heat to low and cook uncovered for 20-25 minutes until lentils are tender.
  6. Stir in spinach or kale during the last few minutes of cooking and finish with lime juice.
