  • 4 oz (113g) fresh goat cheese, crumbled
  • 2 tbsp (30ml) extra virgin olive oil
  • 2 tsp fresh rosemary, finely chopped
  • Salt and pepper to taste

  1. Preheat your oven to 425°F (220°C).
  2. Peel and cube the sweet potatoes into bite-sized pieces.
  3. In a bowl, toss the sweet potato cubes with olive oil, salt, pepper, and chopped rosemary until well coated.
  4. Spread on a baking sheet lined with parchment paper and roast for 25-30 minutes until tender and golden.
