  • 1 bulb garlic
  • 1 medium onion, diced
  • 2 tbsp extra virgin olive oil
  • 3 cups low-sodium vegetable broth
  • 1/4 cup fresh basil leaves
  • 1 tsp sugar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes.
  2. In a large pot, heat 2 tbsp olive oil over medium heat. Sauté the diced onion until translucent (5-7 minutes).
  3. Add chopped tomatoes, sugar, salt, and pepper to the pot. Simmer for about 10 minutes until tomatoes soften.
  4. Squeeze roasted garlic cloves into the pot; stir well.
  5. Pour in vegetable broth and bring to a gentle boil. Reduce heat and simmer for an additional 15 minutes.
  6. Blend soup until smooth using an immersion blender or regular blender.
  7. Serve hot, garnished with fresh basil.
