  • 6 large eggs
  • 2 cups shredded cheddar cheese

  • 1 bell pepper, diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, sauté diced onion and bell pepper in oil until softened, about 5 minutes.
  3. Add crumbled sausage to the skillet and cook until browned, approximately 8-10 minutes.
  4. In a large bowl, mix the sautéed sausage mixture with hashbrowns, eggs, milk, half of the cheese, salt, pepper, and garlic powder until well combined.
  5. Pour the mixture into the prepared baking dish. Top with remaining cheese.
  6. Bake uncovered for 45-50 minutes or until bubbly and golden brown on top.
