  • 1 cup whole milk
  • 3 large eggs
  • 1 cup shredded sharp cheddar cheese
  • 4 strips bacon, cooked and crumbled
  • 3 tbsp unsalted butter

  • 1/4 tsp freshly cracked pepper

Instructions

  1. Preheat your oven to 425°F (220°C) and place a cast iron skillet inside to heat.
  2. Cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels, reserving some drippings.
  3. In a mixing bowl, whisk together flour, milk, eggs, salt, and pepper until smooth.
  4. Fold in half of the cheddar cheese and most of the crumbled bacon.
  5. Pour the batter into the hot skillet with reserved bacon drippings and bake for 20-25 minutes until puffed and golden brown.
  6. Serve immediately topped with remaining cheese and bacon.
