  • 2 sheets high-quality frozen puff pastry, thawed
  • 1 medium onion, diced

  • ½ cup heavy cream
  • 1 tsp fresh thyme, chopped
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, add olive oil and sauté diced chicken until browned (5-7 minutes). Add onions and garlic; cook until onions are translucent.
  3. Stir in mushrooms and cook until they release moisture (3-4 minutes). Add heavy cream, thyme, salt, and pepper; mix well.
  4. Roll out puff pastry on a floured surface and cut into 4×4-inch squares.
  5. Spoon the chicken mixture onto the center of each square. Fold diagonally and pinch edges to seal.
  6. Place on a baking sheet lined with parchment paper and bake for 20-25 minutes until golden brown.
