  • 1/2 cup honey
  • 1/4 cup Dijon mustard
  • 2 tbsp extra virgin olive oil
  • 3 cloves fresh garlic, minced

  • 2 cups chopped vegetables (carrots, potatoes)
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together honey, Dijon mustard, olive oil, garlic, salt, pepper, and soy sauce until smooth.
  3. Marinate chicken in half of the marinade for at least 30 minutes.
  4. Chop vegetables into bite-sized pieces.
  5. On the prepared sheet pan, place marinated chicken on one side and arrange vegetables on the other; drizzle remaining marinade over everything.
  6. Roast for 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C) and vegetables are tender.
