  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 medium carrots, finely chopped
  • 1 cup dry red wine
  • 1 (28 oz) can whole tomatoes
  • 2 cups beef broth
  • 2 tsp fresh thyme
  • 1 bay leaf
  • 2 tbsp olive oil

  1. Sear the short ribs in olive oil over medium-high heat until browned on all sides (3-4 minutes per side). Remove from the pot.
  2. In the same pot, sauté onions and carrots until onions are translucent (5-7 minutes).
  3. Add minced garlic and tomato paste; cook until fragrant (about 1 minute).
  4. Deglaze with red wine, scraping up brown bits; let simmer until reduced by half (about 5 minutes).
  5. Add crushed tomatoes and beef broth; return short ribs to the pot with thyme and bay leaf.
  6. Cover tightly; simmer on low heat for 2-3 hours until meat is fork-tender.
