  • 1 lb large shrimp (peeled and deveined)
  • 4 medium zucchinis (spiralized into noodles)
  • 4 cloves garlic (minced)
  • 4 tbsp unsalted butter
  • 2 tbsp olive oil
  • 1/2 cup dry white wine
  • Juice of 1 lemon
  • 1/2 tsp red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Spiralize zucchinis into noodles and set aside.
  2. In a large skillet over medium heat, melt 2 tbsp butter with 2 tbsp olive oil. Sauté minced garlic until fragrant (about 30 seconds).
  3. Add shrimp to the skillet, cooking until pink (about 2-3 minutes).
  4. Pour in white wine, scraping the pan to deglaze, then stir in lemon juice, red pepper flakes, salt, and pepper. Let simmer for another couple of minutes.
  5. Toss in zucchini noodles and combine everything well for about 2-3 minutes until heated through.
  6. Remove from heat and mix in the remaining butter; garnish with fresh parsley before serving.
