  • 1 bay leaf

Instructions

  1. Dice the onion and mince the garlic; chop carrots and potatoes into bite-sized pieces.
  2. Optional: Sear chicken thighs in a skillet for 3-4 minutes until golden brown.
  3. Add seared chicken, carrots, potatoes, onion, garlic, thyme, and bay leaf to the slow cooker.
  4. Pour chicken broth over the mixture until just covered; stir gently.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours.
