  • 2 lbs russet potatoes, peeled and sliced thinly
  • 2 cups sharp cheddar cheese, shredded
  • 1 large sweet onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp paprika

Instructions

  1. Prepare the ingredients by washing and peeling the potatoes; slice them thinly. Dice the onion and mince the garlic.
  2. In the slow cooker, layer half of the sliced potatoes, followed by half of the steak cubes, half of the onions and garlic, and half of the cheddar cheese. Repeat layers with remaining ingredients.
  3. Pour beef broth over layered ingredients to keep them moist.
  4. Season the top layer generously with salt, pepper, thyme, and paprika.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours until tender.
  6. Stir gently before serving hot. Garnish with fresh herbs if desired.
