  • 1 cup Arborio rice
  • 200g smoked haddock, cut into pieces
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth, warmed
  • 2 tbsp butter
  • ½ cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a large saucepan, heat a splash of olive oil over medium heat. Sauté the chopped onion until soft and translucent.
  2. Add minced garlic and Arborio rice; cook for 2 minutes until the rice is lightly toasted.
  3. Gradually add warm vegetable broth one ladle at a time, stirring continuously until absorbed before adding more.
  4. When the rice is nearly al dente, fold in the smoked haddock and let simmer for an additional 5 minutes.
  5. Remove from heat and stir in butter and grated Parmesan until melted. Garnish with parsley before serving.
